    April Absinthe (Ice Cream) brings you a new kind of confectionery buzz. Specifically, of course, I’m talking about everyone’s favorite ice cream shop (even Buzzfeed’s!): The Comfy Cow, coming up with something to beat even its legendary alcoholic milkshakes of 2014. If you missed out last January, all the more reason to live it up in 2015 with a sassy taste of early spring.

    The Comfy Cow is coolly collaborating with Copper & Kings Craft Brandy Distillery, concocting the kind of ice cream for a true foodie; a bona fide Southern superstar with intoxicating taste; a connoisseur of the finer and adventurous things in life. March is such a welcome taster; “Absinthe Minded” will be an April flavor, but you can be one of the auspicious ladies and gents to sample it firsthand this weekend at The Flea Off Market.

    Who doesn’t love a sneak peek? And who wouldn’t be game for specially doctored distillery ice cream? Let’s put it this way: If you are a Debbie Downer- and I don’t mean the kind who downs decadent ice cream- I would be happy to volunteer as sweet tooth tribute.

    The Comfy Cow is smitten with spring fever, inspiring the introduction of this fabulous “Foodie Flavor.” Meet “Absinthe Minded,” with a pure and luscious sweet cream base, gloriously loaded with the finest sustainably grown Barry Callebaut dark chocolate pieces. And here’s the inebriated cherry on top: an exciting swirl of Copper & Kings Absinthe Blanche spiked orange curd.

    Tim Koons-McGee, one of the original founders of The Comfy Cow said, “Being able to collaborate with other local businesses who are like-minded in their commitment to quality and innovation is one of the main reasons we got into this business in the first place. We’re extremely proud of this newest flavor in our lineup and proud of our association with Copper & Kings.”

    Fun fact about Copper & Kings American Brandy Co.: No added sugar, colors, flavors, or synthetic chemicals. Beverage entrepreneurs Joe and Lesley Heron own this cutting-edge distillery in Butchertown (1121 E. Washington Street), using traditional copper pot-distillation for pure, sumptuous, craft-distilled brandy. Between The Comfy Cow’s epicurean master-class standards and Copper & Kings prized artfulness of technique, this seems to be the beginning of a beautiful (and scrumptious) alliance.

    More news from this epic ice cream parlor: In addition to the five stores already booming throughout Louisville and Southern Indiana (plus Louisville Whole Foods and assorted restaurants/specialty stores), ice cream expansion continues on the horizon.
