    Highland Morning's Dutch Apple Pie Waffles

    Breakfast is the most important meal of the day or at least that’s what they say.  One of my favorite places to go for breakfast is Highland Morning. They have been voted “Top 100 Great Breakfasts in America” by Urbanspoon. It always starts my day off right when I get a chance to stop in. Open daily, their menu features home-style southern breakfast and lunch eats that are simply delicious. I love that they serve breakfast all day long with traditional favorites like eggs benedict, huevos rancheros, omelets and their award winning biscuits and gravy. 

    Why is Highland Morning one of my favorite places? One word – waffles!

    This week’s best bite goes to Highland Morning’s Dutch Apple Pie Waffles. Just one bite and you’ll know why you need these waffles in your life. The golden brown waffles are stuffed with spiced apples and white chocolate chips, covered with homemade vanilla compote and graham cracker crusts and topped with real whipped cream and caramel drizzle. Pure perfection. They are served in four little mini waffles making it easy to share for $8.49.  

    For all you Nutella lovers, you must try the Katie’s Leaning Tower of Waffles for $7.99.  It’s a tower of crispy Belgian waffles stacked high with Nutella and fresh strawberries in each layer and topped with whipped cream and sprinkled with powdered sugar. It’s a beautiful display of delicious waffle art. 

    My other favorite is the omelet selection. Highland Morning’s omelets are served with famous Kentucky stone ground grits or you can substitute grits of the day or skillet potatoes for 99 cents. The Kentucky’s Pick Three Omelet is a great deal for $8.99. It’s a three-egg omelet filled with your favorite three ingredients, freshly diced bacon, diced ham, Purnell’s sausage, onions, fresh peppers, mushrooms, diced tomatoes, jalapeños  baby spinach, diced avocados and your choice of one: American, cheddar, cheddar-jack, pepper jack, Swiss cheese or shredded mozzarella. Try an omelet with bacon, jalapeños and fresh peppers and cheese.  The texture of the light, fluffy eggs mixed with the flavors of the savory bacon and the hotness of the peppers is a delight for the tastebuds. Substitute the grits for a cup of fruit for a lighter option.
