    Chipotle Mexican Grill, the gourmet burrito and taco chain named after a smoke-dried jalapeno, recently signed a lease and began construction on their first Louisville location, which will be downtown at 315 S. Fourth St. It is projected to open in mid-2013.

    Originally based in Denver, Colorado, the chain has over 1300 locations (and counting!) throughout the United States, Canada, and the United Kingdom.

    Some fun facts about Chipotle (from www.chipotle.com):

    ~ The 1st location opened in Denver in 1993.

    ~ The first locations outside of Denver opened in 1999

    ~ 100% of the chicken and pork they use is naturally-raised.

    ~ In 2004, they started using frying oil with zero trans fat.

    ~ Currently, 40% of their black beans are certified organic. That number is always getting larger, and they use REAL cheese and sour cream, too!

    Interestingly enough, a Qdoba is across the street. May the better freshly-made Mexican “fast” food joint prevail! *rings bell*
