    Shrimp Banh Mi by Let's Eat...!

    Last Fall, I was a TA at Sullivan University for the International Cuisine lab. In this class was a student named Gary Bajdek, who made Banh Mi one day when we were studying Vietnam. Gary had a special knack for making these delightful sandwiches, which he prepared several times during the quarter, and he is now selling them, along with some delicious tacos, from his food truck called “Let’s Eat…”!

    In January, Gary bought his truck. He did most of the work on it himself, ordering and installing all the necessary equipment for a functioning mobile kitchen. The start has been slow, but Gary is certain that huge success is ahead! After only a few weeks in business, people are already loving his food. Myself definitely included.

    Now, before I wrote this article, I had to try the Banh Mi just to make sure it was as great as I remembered… and it was! My other options were chicken and pork, but I chose shrimp. They were perfectly cooked and layered onto fresh French bread with cool cilantro, crunchy carrot and daikon slaw, spicy jalapenos, and a creamy mayo sauce. So simple, yet so perfect. Yum.

    “Let’s Eat…” is a new member of the Louisville Food Truck Association, and Gary hopes to be involved with local charity fundraisers so that he can help out the community as much as possible. He is also interested in doing festivals and private events. With a kitchen on wheels, Let’s Eat… can do on-site catering! Gary's contact information is below.

    Today, (Sept. 28th), “Let’s Eat…” will be at the Cropped Out Music Festival at Turner’s on River Road from 5-10 PM.

    Eventually, Gary hopes to expand and serve Indian food, but for right now, he is serving banh mi sandwiches and tacos. His favorite thing about owning a food truck is the constant possibility of menu changes, so look out for new offerings! Let's Eat... can be followed on Twitter.

    For now, payment is cash only, but Gary will soon be able to accept credit cards. Right this very moment, he is in the parking lot of Sullivan University on Bardstown Rd., selling his yummy food. If you hurry, you can make it – he leaves at 1:30! If you can’t make it, be sure to find Gary and his truck sometime soon.
