    Eggs Over Baxter Grand Opening

    After less than a year since opening Eggs Over Frankfort, entrepreneurs Cortney and Jackson Nave are cracking open a new egg with Eggs Over Baxter. Their new venture opened it's doors to the public today, Wednesday, April 29th. 

    The new location at 926 Baxter Avenue will have the same hours as their Eggs Over Frankfort location, open 7:30 am - 2:00 pm Monday through Friday and 7:30 am - 3:00 pm Saturday and Sunday. The diner-style breakfast and lunch restaurant will be able to sit around 100 guests.

    Eggs Over Baxter will also have libations on their menu to go with their sweet and savory meals. While Eggs Over Baxter will not be open for dinner, it will be available for private parties, meetings, wedding receptions, baby showers and other private gatherings. A separate menu will be available with dinner dishes including chicken, fish and other dinner favorites. 

    The Naves have over 25 years of combined restaurant experience, including opening the St. Matthew location of the Mellow Mushroom. "We're excited for the opportunity to open a second location in the Highlands neighborhood so that we can better serve Louisville's community," stated Jackson Nave. 

    Their "farm-meets-industrial" atmosphere will fit right in among the hip restaurants in the Highlands neighborhood; which is known for its local businesses.
