    Every once in a while, an idea comes around that revolutionizes food service - fast food, drive thru's and, more recently, the assembly-line style restaurants like Qdoba. If you’ve ever had the thought that the assembly-style model would translate into pizza in a way that would blow your mind, you’re either in luck or you can kick yourself because someone beat you to the punch. Louisville is now home to one of the first franchises of Blaze Pizza outside of California. It’s something you definitely need to try.

    Opening this Monday, June 9th, Blaze Pizza is located in St Matthews at 4600 Shelbyville Road, near the mall. They sport an amazing array of toppings, from traditional pepperoni to roasted garlic and gorgonzola cheese. They also have a spicy tomato sauce that is out of this world - you’d do yourself a disservice not to try it. You can pick from one of their eight specialty pizzas, or you can build your own - the possibilities are endless. Not only do they make an amazing pizza, but it’s ready just as quick as any other fast food, and it’s only $7.95 for a personal pizza. They’re 11” in diameter, which is bigger than your average personal, making for at least one meal.  

    The menu was designed by Chef Brad Kent, who developed a special crust recipe that is simply amazing - I’m not generally a fan of thin crust pizzas, but this was some top-of-the-line dough. Blaze also has several gluten-free options, including a crust that tastes just as good as the regular one. It’s extra thin (almost like a tortilla) but doesn’t skimp on any of the flavor, unlike lots of other gluten-free stuff out there. They also feature wine and beer, with a gluten-free lager on hand.

    Blaze Pizza has choices for everyone - meat lovers, vegetarians, vegans and gluten-free eaters are all included in the menu with equal options - and it only gets better: this Tuesday, June 10th from 11 a.m. to 10 p.m. Blaze Pizza will be open and serving all items for free. That’s right - come in all day long for a free pizza. Don’t miss out - this is an opportunity you don’t want to regret - the pizza is well worth the price, but nothing beats free.
