I awoke to some very sad foodie news yesterday morning. Copper Cupcake, home of cupcakes that turned this cupcake-avoider into an avid fan, will be closing its bakery doors on April 11th.

I first met Copper Cupcake when visiting LUSH in Oxmoor Mall in the midst of a delightful mother/daughter day. LUSH was handing out these cupcakes that for some reason seemed different than all the others. So I tried one and was instantly a fan. My mother, who even devotedly keeps to a diet with willpower, as I have never seen, indulged in their intensely chocolaty treats that day. She enjoyed every last morsel.

Copper Cupcake continued to impress me at GuardiaCare’s annual decadent affair Chocolate Dreams with some Chocolate Salted Caramel cupcakes that rocked my foodie heart to the very core. And then again at Girls Scouts of Kentuckiana’s Desserts First event with some sensational Chocolate and Samoa Caramel Corn. You can’t beat popcorn when it’s done well, and Copper Cupcake seemed to understand all the gastronomy secrets with imaginative flair.

I am no traditional cupcake fan. While I have a massive sweet tooth and adore cakes, I for some reason have always been frenemies with cupcakes. We have peacefully coexisted, but I admit; there was aloofness on my part. Something about the texture was just not that exciting to me. The icing would come across a one-note, insipid overdose of sugar. Only those of my best friend’s baking could tempt me.
That is up until Copper Cupcake had me craving their scrumptious creations. I was walking along, minding my business, when suddenly, I understood what all the fuss was about. I had just been eating the wrong cupcakes. Copper Cupcakes’ delicacies had a depth of consistency and bounded with flavor unlike any before.

“These are the kinds of cupcakes my grandmother would make,” Shannon Loucks, self-proclaimed Deliciousness Maker and header of this captivating artisanal bakery, had told me. Every event I have seen the Copper Cupcake dishing up striking eagerness along with their enchanting treats, all using locally sourced ingredients. Service matters, and these folks radiate that Southern kindness we all love most about Louisville.
