Chef Michael Crouch talks about Joe & Larry's Chicken Shack

Bistro 1860’s, Executive Chef, Michael Crouch has plans to bring some hot and spicy fried chicken to The Ville. Joe & Larry’s Chicken Shack is named after Crouch and his business partner’s fathers. The concept will be similar to Prince’s Hot Chicken Shack located in Nashville, a local fried chicken shack said Crouch. It will be located right behind Bistro 1860, a prime location for him to develop recipes and train the staff.

The menu, according to Chef Crouch, will feature fried chicken at three different levels of spicy, hotness. Don’t worry sensitive stomachs, there will be chicken that’s not spicy at all. Traditional sides – like his mom used to make – include mac & cheese, potato salad, green beans, mashed potatoes, potato wedges, cream-style corn and braised greens. He will add weekly or daily specials to the menu based on local produce availability.

For dessert, you will be able to pick from blackberry or peach cobbler. The perfect complement to some spicy, fried chicken.

Joe & Larry’s Chicken Shack will be open for lunch and dinner with the option to dine in or carry out. There’s no official grand opening date but Chef Crouch said he is targeting sometime after Derby. Is it May, yet?
