      The NuLu neighborhood is known as a trendy part of town marked with boutiques and upscale restaurants, a strong ‘green’ movement, and being, well, new.  After all, NuLu means New Louisville. As the area continues to blossom, even in these winter months, new ventures are embracing the old Louisville with some help from a known face.
       In association with his 21c partners, Chef Michael Paley, famed in Louisville for his hand in Proof on Main, will be opening a casual neighborhood restaurant in the 700 block of East Market Street, which will serve wood-fired oven pizzas and Southern specialties, and will boast an eclectic craft beer menu. There is still quite some time until final details will be released because construction has just begun, and the place is still unnamed.
      This new spot will be inside of a building that was most recently an auto garage, but its 90-plus-year history includes being a saloon.  The idea is to keep the history of the building alive and also reinventing it once again, as is per usual Louisville style (unless you want to talk about the Iron Quarter).
      Michael Paley says, “Great restaurants are the building blocks of a neighborhood, and we are excited to add to the already thriving restaurant scene in NuLu.” Indeed, Paley’s neighbors will be 723 Social, Toast, and The White Oak, to name a few, but the concept of this new restaurant, with talks of pizza and Southern treats, seems to be strikingly different than the status quo of the area. If just thinking about the NuLu neighborhood doesn’t make your mouth water, just wait for the grand opening of Paley’s new creation.
