Now through September 6, you can enjoy the special menu offerings of Green Chile dishes at Chuy's in Louisville and Southern Indiana. The Green Chile Festival is happening at both locations and it's packed full of heat and flavor.

I was able to experience the entire Green Chile Festival menu over the weekend, and let me say the taste buds were popping! Each dish packed its own punch and brought about a slightly different flavor in each bite.

    The festival lineup includes:

    1) SPECIAL GUEST
    Bang Bang Burrito $11.29

This dish is a flour tortilla stuffed with fajita beef, grilled peppers and onions and jack cheese. It's topped with spicy salsa frita and caramelized veggies and served with green chile rice. This dish was not too spicy and the beef was so tender, it was perfection.

    2) HEADLINER
    Bacon Wrapped Pork Rellenos $10.29

This dish is two fresh hatch green chile peppers that are fire-roasted and filled with pork al pastor and jack cheese. It's then wrapped in bacon and deep fried and also topped with salsa brava and spicy crema. It is served with green chile rice and refried beans. Contrary to the bang bang burrito, this dish was full of kick, so if you like your authentic Mexican really spicy, go for this one. Who can say no to bacon, the thing that makes everything all that much better.

    3) GROUPIE
    Fat Daddy Enchiladas $10.79

This dish starts with fajita chicken, fresh spinach and mushrooms, red onions and jack cheese all rolled inside homemade corn tortillas. It's smothered with green chile Rosado sauce and fresh roasted green chiles; served with green chile rice and refried beans. If I were ranking these dishes by most favorite or not, the Groupie would probably come in #1 for me. It was flavorful and delicious.

    4) VIP
    Green Chile Pork Tamales $10.99

Two homemade tamales are filled with green chile roasted pork and topped with melted cheese and hatch green chile or red chile sauces. It's served with green chile rice and refried beans as well. Of all the dishes we tried, this one was the mildest in terms of heat from the green chiles.

    5) ROADIE
    Veggie Fajitas $13.29

Take zucchini, yellow squash, red bell, Anaheim and Serrano peppers, onions and crimini mushrooms and serve them up sizzling fajita style and you've got the roadie. It's served with homemade flour tortillas, lettuce, guacamole, sour cream, cheese, pico de gallo, green chile rice and refried beans. This was scrumptious and another favorite in terms of freshness and flavor combinations.

    6) ENCORE
    VIP Combo $10.59

In the VIP Combo, you'll get a taste of both the bacon wrapped pork relleno and one fat daddy chicken enchilada. A combination most worth it for that zest and top notch flavor that the Hatch green chiles bring to each of these sizzling dishes.

It was a pleasure speaking and meeting with one of the GMs of Chuy's Louisville, who came to our table and pulled up a chair to discuss with me how much Chuy's loves the Green Chile Festival. It was interesting to learn that Chuy's uses their own locally grown Hatch green chile farmer out of New Mexico, and they harvested 2 million pounds of the unique Hatch green chiles to be used in dishes across the country during the Green Chile Festival. Stop in Chuy's this week and try one of these outstanding offerings. Use the hashtags #GreenChileFestival and #EatLoveLouisville and get social!
