    Louisvillian Kristina Addington was the first vegan to win on The Food Network's Cutthroat Kitchen, and in October 2014 Louisville.com broke the news that Addington was venturing into the world of Louisville food trucks with V-Grits, serving Southern-inspired, stick-to-your-ribs vegan food. 

    Since then, V-Grits has popped up in local events like Mondays's Yelp Elite gathering at The Lee W. Robinson company, or tonight's megaBITE tasting event at the Kentucky Science Center, and V-Grits is ready to launch in earnest. On Thursday, February 19, V-Grits will throw their official launch party at the Monkey Wrench (1825 Barrett Ave.) at 6 p.m. There will be live music by Violet Knives (starting at 9 p.m.), and the first 58 food orders will get V-Grits swag. 

    Addington's goal for V-Grits is to provide "Southern fried compassion" and "soul food with a soul." At the Yelp event this past Monday, she explained to the crowd that V-Grits actually stands for Vegan Girl Raised In The South, and that her food is a partial homage to the culture of Louisville and the South, a culture she loves. At that event, V-Grits served their jackfruit BBQ with "Classy Sassy" or "Bourbon Brown Shuga" sauce, greens and beans and Memphis-style slaw. The texture of the jackfruit BBQ was incredibly good, and could have easily been mistaken for lean pulled pork.
