    Barbecue Parfait from Shack in the Back

    I love food trucks.  Any time there is a festival in Louisville, you are sure to find some pretty awesome dining options.  I mean, we have an entire truck dedicated to grilled cheese and another dedicated to lobster rolls.  We’re far too sophisticated to dine on Polish Sausages and funnel cakes.

    This weekend I took my family to Forest Fest at the Jefferson Memorial Forest.  Parking was $10 and admission was free, making it a very affordable day of family fun.  Entertainment included a Bluegrass concert, a bouncy house, and a paintball shooting range.  There was also plenty of room for my kids to run and some great climbing trees.

    I counted three food trucks at Forest Fest, but they were three really solid choices.  We stopped first at Heine Brothers for coffee.  Our last stop was Erhler’s for root beer floats.  But what happened in between had my Twitter blowing up all afternoon.

    I discovered this beautiful creation, made by Shack in the Back Barbecue, called a barbecue parfait.  I read through the menu as I stood in line and was quite happy about both the choices and the prices.  But when I approached the cash register to place my order, there it was.  Layered in a parfait cup was baked beans, mashed potatoes, pulled pork, and cole slaw topped with pickles.  I knew I had to try it.

    I topped it off with some sweet house-made barbecue sauce and mixed it up.  It was amazing.  The only thing I would change is substituting potato salad for the mashed potatoes.  Other than that, it was perfection.  And I’ve never seen anything like it before.

    I’m curious now to try Shack in the Back Barbecue, home of something called “turkey ribs.”  If these “turkey ribs” are half as good as my barbecue parfait, I’ll be happy.
