    Chefs Dustin Staggers (Roux) and Griffin Paulin (Rumplings) are teaming up with Chef Eric Morris (Loop 22) to bring Louisville something new and exciting: a “secretive dining club concept” called 10 Tables.

    I chatted with Staggers about 10 tables today, and he was excited about the partnership. “Well, this town loves chefs. So the more chefs the better. If this goes well, we’ll be expanding this and possibly looking for a more permanent location.”

    The inaugural 10 Tables dinner will be held at Staggers’ restaurant Roux, at 1325 Bardstown Road, on Monday, January 19 with a 7 p.m. seating.  There are only 20 to 40 reservations available for this dinner, since as the name suggests, they will only be serving ten tables. It will be a fixed-price six-course prix fixe dinner with an optional wine pairing. Price point should be around $60 - $75 per person, with a $40 - $50 addition for the wine pairing. Drinks from Roux's regular menu will also be available. 

    Staggers assured me that they are going to serve the “freshest, most innovative shit we [Staggers, Paulin and Morris] can come up with. It’s going to be sexy, but not too buttoned down. It’s really going to be the place you take someone you seriously want to impress.” Menus will change seasonally, and with the whims of the chefs nightly. The second dinner will be held at Loop 22.
