Back when hotdogs set you back a quarter, and the only equipment needed to get you running was a small coal fired grill, Edgar Sivori worked with a friend to set up a side business selling food. Now, the homegrown Louisville, Kentucky based business travels to over three dozen events yearly across the Midwest and Southern portions of the United States.
Started by the patriarch of the Sivori Family, Edgar Sivori was a plumber by trade. He earned money on the side with his small stand at the old fairgrounds. When competition moved in, Edgar got serious about the concession business and purchased his first real equipment. He went out on his own and officially started Sivori Catering in 1964, leaving his days as a plumber behind. The days of selling hotdogs and canned Coke at Miles Park have grown into a successful business, now run by his son, Larry, and daughter-in-law, Ruth, with over a dozen stands serving traditional fair favorites as well as specialty dishes and chef’s selections. This year the company celebrates 50 years of continuous service at the Kentucky State Fair.
Known to many as the “Midway Man” Edgar’s legacy has been passed on to his son Larry, who is known for bringing creative dishes to Kentucky, such as the donut burger, deep fried Kool-Aid, and deep fried Girl Scout cookies. To celebrate 50 years of rich Kentucky State Fair history, Sivori Catering is launching a Kentucky themed food stand at the 2014 Kentucky State Fair. The stand will serve the national phenomenon, Deep Fried Derby Pie, previously featured in “Conde Nast Traveler,” and “The Daily Meal.” Additionally, Larry devised a brand new fair treat which will debut at the Kentucky themed stand, a Hot Brown on a Stick, inspired by the Derby time favorite dish. The Hot Brown on a stick combines chunks of ham and turkey with tomatoes. A piece of bacon is woven in between the shish kabobed items. The entire concoction is then deep fried in a special batter, and topped with a delicious Mornay sauce.
The special 50th anniversary Sivori Catering Kentucky themed stand will be located in front of Freedom Hall.
