Sunday evenings, beginning June 7 from 8:00pm to 11:00pm, 8 UP Executive Chef Jacob Coronado turns UP the fun and the flavor as he offers UP one of his favorite dishes, Tonkatsu (pork bone broth) Ramen, made with pickled shiitake mushrooms, candied kombu, tare egg, corn, green onions, and tagorashi seasoning. East-meets -Southeast as Chef Coronado uses local (Sheltowee) mushrooms, and farm-fresh eggs for this satisfying bowl of Asian noodles. [Bowl of Tonkatsu Ramen will be $11.]
As we enter rosé season, Beverage Director Julie DeFriend has curated an international collection of the cooling, pink wines that can be ordered by-the-glass or by-the-bottle. “Rosé is a perfect summer wine as it’s fresh, crisp, and full of perky brightness from the acidity - which is ultimately the best compliment to all foods,” notes DeFriend. Beverage Director and acclaimed mixologist, Sean Thibodaux is crafting a Bamboo Asian cocktail, a Sherry and Vermouth based libation created in the 1890s by Louis Eppinger, the manager of the Grand Hotel in Yokohama, Japan.
