As part of our Holiday Celebration, Brasserie Provence will offer a fantastic 5-Course Sparkling Wine Dinner on Thursday, December 10th at 6:30pm. The reception will start with a Blanquette de Limoux (Limoux is the first actual sparkling wine area), followed by three different Champagne Brut styles and a New Mexico Demi-Sec sparkling wine finish. Chef Bacci will pair the wines with ingredients indigenous to each region, preparing some very classic dishes such as Roasted Quail Clefmontaise (a white raisin cream sauce) and an Exotic Fruit Champagne Sabayon for dessert, as well as recipes with a contemporary twist like Trout Joinvillaise with shrimp sauce served on a citrus arugula risotto, and Wild Boar Loin Chop with Chanterelles and an Apple Reduction. David Dubou, wine specialist from Vintner Select, will provide detailed information on these beautiful and elegant wines.
The price is $95 per person plus tax and gratuity. Dinner guests will be able to pre-purchase all of the wines through Westport Whiskey and Wine at a 15% discount.
