Louisville.com broke the news a scant few days ago that Rumplings was closing and Epic Sammich Co. was opening at 2009 Highland Avenue. June 16, is the day, and Epic Sammich Co. is opening at 11 a.m. Here's the menu:

An example of the fare offered is this Cuban B ($9) with Cuban bread, Mojo pork, Genoa salami, swiss cheese, smoked onion mayo, horseradish honey mustard and Bentons Country Ham.
