Chef Michael Paley of Proof on Main will be featured this Saturday September 27, 2008 at the James Beard House in New York. He’ll be preparing a menu that features his distinct style and Kentucky influences and ingredients. After he returns from NY the dishes from his Beard House meal will be presented as specials at Proof.
That menu includes:
Yellowtail Jack ‘Escabeche’
Pickled carrots, chilies, avocado, garlic chips
Salad of Arugula & Kentucky Bison
Bison tongue, fingerling potato, fried egg, bison ‘mojama’
Braised Kentucky Goat
Butifarra, lovage, whipped goat cheese
Roasted Berkshire Pork
Wrapped in Proof lomo with creamed hominy, jade beans & date puree
‘Sgroppino’ of Cava & Quince Sorbet
Aged manchego, quince jelly
