Chef Ghyslain has said, “One of my favorite chocolates was a cardamom and chocolate combination that I would eat with French roast coffee. Coffee Cardamom Chocolate Chip Gelato. The flavors would move like a dancer across the tongue. Cardamom first, strong and exotic like the streets of India, tempered just slightly by the milky smoothness of gelato. Coffee and chocolate skipping hand-in-hand just after it, melting for the perfect finish.
