A few weeks ago, Governor Steve Beshear and Louisville Mayor Greg Fischer announced that The Comfy Cow is establishing a production facility in Louisville. This facility will provide a standalone process for the company to produce its signature ice cream to be shipped and sold in retail sites throughout the United States.
The Comfy Cow will invest $2 million into the facility, which will create 50 new jobs for our local economy. In a newsroom release from the Commonwealth of Kentucky's Cabinet for Economic Development [5], Governor Steve Beshear said, "(Today’s) announcement is a sweet treat in a number of ways. Not only is The Comfy Cow creating 50 new jobs, but the company’s growth also is a great example of how demand for Kentucky-made products is extending beyond our state’s borders. I want to congratulate the company on its success and look forward to The Comfy Cow being a household name nationwide.”
The facility will be a leased building in Jeffersontown's Regency Pointe Business Center. It will be a 6500 square foot space, and according to the news release, production is expected to begin in April 2015. The Comfy Cow's vision all began on September 15, 2007. According to a timeline of their history [6], The Comfy Cow has reached several milestones along their path as a local ice cream shop in Louisville. Highlights include:
- Opening the first store in Westport Village in December 2009
- Earned the first LEO Choice Awards as Best Ice Cream in Louisville in September 2010
- Opened the second store on University of Louisville's campus in in August 2011
- Opened the third store on Frankfort Avenue in October 2011
- In recent years, The Comfy Cow has also opened a fourth store on Bardstown Road and a fifth store in New Albany, Indiana. Plans are underway for construction for new locations in Brentwood, TN and Middletown.
The Comfy Cow's signature flavors include: Black Raspberry Chip, Bourbon Ball, Cake Batter "Up". Chocolate, Chocolate "Chip Off the Old Block", Cookie Monster Dough, Cookies and Cream, Cow Tracks, Freshly Roasted Coffee, Georgia Butter Pecan, Minty Chocolate Chip, Salted Caramel, Simply Southern, Strawberry Fields Forever, Vanilla, & Vermont Maple Walnut. Read more about each flavor here [7]. I remember the first time I visited The Comfy Cow and tasted the delicacy of this ice cream. One of the servers suggested a caramel latte combination for me that I still order to this day. It was a scoop of Freshly Roasted Coffee and a scoop of Salted Caramel. I loved the personal attention and the suggestion. Experiences like this are what make The Comfy Cow who they are, and I am stoked to be able to soon shop at my grocery store and find pints of their ice cream right at my fingertips! Nothing will exactly replace the ambience of sitting in a booth or comfy chair at a store, though, and licking dripping ice cream off your hand. So, you will still have to frequent their establishments, and quite often I urge you.
