Strati Wild Italian is opening this coming Monday, September 29, at 1702 Bardstown Road next to Sapporo. The restaurant will serve “fast casual” Italian, which means food prep will work on an assembly line, build-your-own, customizable basis.
The customer will first choose their base: salad, wrap, lasagna or pasta, then pick a protein, and then pick from a variety of “wild Italian” ingredients. There will be four kinds of pasta available (including gluten-free and spaghetti squash!) and eight proteins (grilled chicken, crispy chicken, sausage, meatballs, steak, roasted shrimp, Italian beef and grilled veggies) and over twenty-five different toppings, sauces, and dressings. Fresh-baked garlic bread, Italian chili, arancini, tiramisu and Limoncello mascarpone cake will also be served, along with Italian sodas, soft drinks, tea, etc.
The owners of Wild Eggs and Wild Rita’s, Shane Hall and J. D. Rotherburg , are the minds behind this new restaurant, and according to their Director of Marketing, Lauren Henson: “We really hope to open several. No one else is really doing fast-casual Italian and it’s great because the food isn’t necessarily heavy, it can be light and healthy.”
I was lucky enough to get a sneak peek at some of Strati’s menu items, including some pre-built options like:
Chicken Amore Wrap
Grilled Chicken, Artichoke Hearts, Field Greens, Basil, Sun-dried Tomatoes, Red Pepper Ricotta and Parmesan
Beef Gorgonzola
Italian Beef, Cavatappi pasta, Alfredo, Gorgonzola Cheese, Roasted Mushrooms, Artichoke Hearts and Italian Parsley
Shrimp Scampi Salad
Roasted Shrimp, Crisp lettuce mix, Sun-dried Tomatoes, Pomodoro, Roasted Garlic Aioli and Italian Dressing with Ranch
